Black Cod With White Wine Tomatoes


-1 tsp olive oil



-⅛ tsp garlic powder

-8 ounces grape tomatoes

-½ small shallot, thinly sliced

-1 garlic clove, minced

-1 cup white wine

-¼ cup chicken broth

-2 tsp fresh thyme

-Sablefish (black cod)


1.Heat a drizzle of olive oil on medium high heat

2.Season both sides of black cod with salt, pepper, and garlic powder

3.Place black cod in the pan skin side down and sear for 5 minutes, or until skin is golden brown and crisp

4.Flip fish and sear for 2-3 minutes on flesh side

5.Remove fish from pan and allow to rest

6.Add more olive oil to pan and remove any leftover fish bits

7.Add cherry tomatoes and allow to sauté for 4 minutes until they begin to soften

8.Add shallots and garlic, sauté for 2 minutes then add the chicken broth and cooking white wine

9.Allow to simmer for 5-7 minutes or until sauce has reduced to about half

10.Plate and enjoy!
