Ingredients
-2 tbsp white wine vinegar
-1 tbsp olive oil
-1 tbsp honey
-1 tbsp dijon mustard
-4 tbsp butter
-1 lb scallops
-1 cup orzo pasta
-3 cups chopped spinach
-¼ cup sliced green onions
-1 cup cherry tomatoes, halved
-4 oz goat cheese, crumbled
Directions
- Cook orzo pasta, drain and store in a medium sized bowl
- Mix together white wine vinegar, olive oil, honey, and dijon mustard. Add to pasta
- Add spinach, tomatoes, and green onions to pasta
- Cook scallops in butter on medium high heat for 4 minutes each side
- Add goat cheese to pasta and cut scallops into quarters and add to pasta
- Enjoy!
