Spinach Orzo Goat Cheese Salad with Pan Seared Scallops


-2 tbsp white wine vinegar

-1 tbsp olive oil

-1 tbsp honey

-1 tbsp dijon mustard

-4 tbsp butter

-1 lb scallops

-1 cup orzo pasta

-3 cups chopped spinach

-¼ cup sliced green onions

-1 cup cherry tomatoes, halved

-4 oz goat cheese, crumbled


  1. Cook orzo pasta, drain and store in a medium sized bowl
  2. Mix together white wine vinegar, olive oil, honey, and dijon mustard. Add to pasta
  3. Add spinach, tomatoes, and green onions to pasta
  4. Cook scallops in butter on medium high heat for 4 minutes each side
  5. Add goat cheese to pasta and cut scallops into quarters and add to pasta
  6. Enjoy!
